Your commercial kitchen hood is only one part of a larger ventilation and fire-protection system. Every component has to work together to safely capture grease, smoke and heat, move contaminated air out of the building, replace exhausted air, and protect the cooking line from fire.
A complete commercial kitchen hood system typically includes:

The Exhaust Hood — Captures heat, smoke, grease-laden vapors and cooking contaminants before they spread throughout the kitchen.

Grease Filters — Remove grease particles from the exhaust airstream before they enter the ductwork, helping protect the ducts and exhaust fan from excessive buildup.

Grease Ductwork — Carries grease-laden exhaust from the hood through the building and safely to the exterior.

Exhaust Fan — Creates the airflow that pulls contaminated air through the hood, filters and ductwork and discharges it outside.

Makeup Air System — Replaces the large volume of air being exhausted so the kitchen stays properly balanced and the hood can continue capturing effectively.

Systems such as ANSUL automatically detect excessive heat and discharge suppression agent over protected cooking hazards while integrating with equipment shutoffs and other fire-safety controls.
